Sourcing
We prioritise ingredients that are seasonal, local, and responsibly produced. Where possible, we work with growers, fishers and makers from Sussex and the South Coast. Our wines are chosen with the same care, favouring low-intervention and independent producers.

Waste
We actively minimise food waste through careful prep, small menus and flexible portions. All food waste is separated and composted where local services allow. Recycling is standard practice, and we avoid single-use plastics wherever we can.

Energy & Resources
